if i use ion blast to knock out my opponents pokemon and we each have 1 prize left who wins the match

It depends on how many ways that you win.
Let's say you only have Electrode left, and your opponent has an Active Pokemon and another one on the Bench.
You both take Prize cards for the mutual-Knock Out, however you lose, because Electrode was your last Pokemon left. (Your opponent wins two ways, you win one way, your opponent wins.)
This is covered in the rulebook in a little more detail.
