Following up on that,

if I attach multiple, different basic types of Energy to Eevee SUM using Rainbow Shower, am I able to activate Energy Evolution for each individual Energy I attach?

Sorry, I missed this.
You are attaching all of the energy at the same time, so the Ability is triggered just the one time, but you would be able to evolve into any Eevee Evolution card that is of the same type as any one of the Basic Energy cards that you attached.

Just re-reading your question.
It wasn't clear from your question, but if you are attaching energy to multiple Eevees that have that Ability, then yes, you would be able to use each ones Energy Evolution and evolve it.
