Okay, here's where I'm confused:
Say you have a base Chansey w/ 2 steel e. and 2 other, then use double edge. I know damage to defending is 60 dmg, but what is damage on Chansey? Is it 60 because of just steel protection, or is it 40 from steel protection and steel reducing ATK dmg?

No problem. If you look at a Metal Energy card, you will see that there are two separate and distinct effects. One is the outgoing damage reduction when attached to non-Metal Pokemon and the other is the incoming Damage reduction for any Pokemon it is attached to.
Since Chancey is not Metal type, it triggers both of these effects and the self damage is reduced twice; once on the "doing it" part and once on the "taking it" part.
So, your second guess is correct and it would only do 40 damage to itself if 2 Metal are attached.
Add an Unown N on the Bench and you have a Metal Chancey deck. Enjoy.

Gold Berries work really well with Metal Chansey; not as effective long-term as Unown-N, but not vulnerable to Gust of Wind. Double-Edge + Gold Berry between turns = no damage on Chansey at start of opponent's turn.

I think it's as broad as it is long, cause you can't necessarily depend upon having gold berries in your hand exactly when you need them. Best case scenario is to have them both. As you get closer to being knocked out a focus would be nice as well.
