If I used E Charizard to turn my energies to Fire...it affects all of them or whether I can choose to not change some

The relevant wording is:

It's an all or nothing deal.

Just remember that the Expedition Zard only changes BASIC energy where as the Legendary Zard changes all energy. This is an important wording situation when using this card in a deck. The LC Zard can change Recycle to Fire and then you can discard them only to get them back in your hand. Very key in this type of deck.
