Sorry for my ignorence, but what is the difference between placing 1 damage counter and doing 10 damage to the defending pokemon???

If you place 1 damage counter, then there is nothing preventing you from putting it there.
If you do 10 damage, then it can be prevented by Resistance, Expedition Golem's Poke-Body, Metal Energy, etc.

Actually, sometihng that prevents all effects of attacks or all effects of attacks (other than damage) would stop the counters.
