Does Nidoking and other Pokemon the state "opponent's Pokemon" only go to one of your Opponents when attacked? I.E. Trample, Earth Rift

From the floor rules:
quote: Attacking 1. When it is your turn, your Pokémon can attack either of the opposing team members’ Pokémon. The opponent you choose controls the Defending Pokémon for any effects.
2. If an attack states “your Pokémon,” you may choose to count or affect your Pokémon or your teammate’s Pokémon. If an attack effect states “your opponent’s Pokémon,” you may choose which opponent that effect affects. An attack effect stating “Defending Pokémon,” is determined by which opponent you choose to attack.
3. If an attack states “all Pokémon” or “all Benched Pokémon,” it affects all four players’ stated Pokémon.

So that means AQ nidokings poke-power works on BOTH of your opponents benchs at the same time?

No. Earth Rage -"Once during your turn (before you attack), if Nidoking is your Active Pokémon, you may flip a coin. If heads, put a damage counter on each of your opponent's Benched Pokémon. This power can't be used if Nidoking is effected by a Special Condition."
Since it states "your Opponent's Benched Pokémon" you would have to pick one of your opponent's Bench to Earth Rage against.

The difference in Trample and Earth Rift is that Trample says all benched Pokemon, Earth Rift says to do it to your opponents Pokemon. Since Trample says all benched, it hits all 4 players, since E R says your opponent, you can only choose 1 of them.
On a related note, can Earth Rift be switched between opponents. Example: I play Nidoking and use power on opponent A, on my next turn can I use it on Oponent B?

I believe since Nidoking's powr is not a continuous one (Like Slowking's Mindgames) you do not have to designate a continuous target while it is in play, so other words, yes.

Actually, Slowking's Mindgames is a continuous Power, its just triggered by an event (in this case a trainer) and it is also required that it were to have a designated target.
This is how powers are probably targeted (correct me if I'm wrong or put it into simpler words):
Player activated Powers: Targeted when used Example-Aquapolis Nidoking's Power, Neo Genesis Elekid's Power
Always on, event triggered Powers: Targeted when come into play Example-Neo Genesis Slowking's Power, Neo Discovery's Forretress's Power, Neo Destiny Dark Ampharos's Power
Always on, constant effect Powers: Targeted when come into play (if aplicable) Example(a)-Neo Discovery Unown D, M, N [choose you or your partner to see who it affects] and Neo Genesis Meganium [again choose to see which person on your team gets the double grass energy bonus] Example(b)-Fossil/LC Muk's power [it affects the whole play area]
