Let's say you use Holon Fossil and flip tails. However, you don't have any Fossil-evolving Pokemon in your hand. Do you have to show your hand to your opponent, confirming you have no Fossil Pokemon there? Thanks in advance...

No.
Your hand is not public information and so you can even fail this on purpose if you don't want to play a specific Fossil Pokemon that is in your hand.

Note that this is different than playing a Rare Candy and failing to evolve since there was a chance that you would have done a search of your deck if you had gotten heads.
