Newbie IV Breeder - Tips?

Yesterday I gave in and said "okay, lets try IV breeding!" Right now I'm working on Eevees, and I've got a male and female with 5 perfect IVs, but getting the offspring to become 6 IV-er is daunting to say the least. So many are coming out at Above Average or Relatively Superior, I would think more would be Outstanding quality considering the parents both have 4 matching perfect IVs and each have 1 different perfect IV.

I'm using the Destiny Knot. Is there anything else I should be using to get this moving along more easily? Any tricks I should know for getting that perfect 6, or is it all just rolling the dice?

And if I give up and say 5 IVs are good enough - which one would you recommend sacrificing?

Your best bet is to try substituting your 5IV parent with one of your 5IV offspring. Each parent has certain IVS that naturally pass on to the offspring making it easier to breed flawless pkmn.
 
Assuming both parents have 5 IVs in the same stats you want, it is possible to get 4 IV offspring still along with the corresponding messages if the random IV chosen and a given inheritance gives you the "bad" IV neither parent has perfect. You'll even see 3 IVs passing if both 5 IV parents have different IVs (say one is 31/x/31/31/31/31 and the other is 31/31/x/31/31/31, it's more than possible for an egg to inherit both bad x IVs and still have the random one).

At its most basic level though, remember only 5 IVs pass, so not only do you need the correct ones to pass, you still have a 1/32 chance on top of that for the random IV needing to come up as 31 too. So it'll still take a bit of time if you want a truly flawless Pokemon, which isn't usually worth the effort since extremely few Pokemon need both of their attacking stats to be perfect.

If you really want one and assuming you have several other 5 IV parents with different IV combinations, you can cycle through inheritance orders until one comes up as 31, then fill in the other parents. But that will probably just take as long as random cycling as you would need every possible 5 IV combo on both genders to ensure you have one that will match when an inheritance order with a 31 IV comes up. And again, there's really no reason to just use a 5 IV parent as long as it has the right IVs, heck for special attackers you don't even want 31 in Atk since that will boost the damage from opposing Foul Play.
