So im confused about this text in particular:

"choose one of the defending pokemon....."

im just getting back into pokemon, but as far as i know the "defending pokemon" are the two active pokemon. I guess im wrong though, so can someone clear me up on this?

The "Defending Pokémon" is the one being attacked.

Whenever you see a "one of" tacked in there, it means if you're playing 2-on-2 play, you have to choose 1 of your opponent's 2 Active Pokémon and do the attack to one of them. Since 2-on-2 never really took off mainstream, the wording was slowly phased out over time.
