So as a consequence of the stadium card "Sky field" being removed from the field, both players must return their total amount of benched pokemon to 5 if they have between 6 to 8 benched pokemon when "Sky field" is removed. This means that there is a possibility between one to three pokemon could be discarded from either playerʻs bench. And if pokemon are discarded in this fashion, does that mean prize cards can be picked up in this way?

No. Sky Field makes it so your bench is bumped up to 8, which is good for Mega Ray and (some) Rainbow Road decks to get their power. But, a normal bench is only 5 Pokemon. If you knock a bench down to 5 by removing Sky Field, or you knock a bench down to 3 with Parallel City, you do not take any prize cards. I hope this clarification helps.
