Just like animals we have now, not ALL Pokémon would be eaten. Its would be all you cattle, any bird, we'll say Staraptor for now just be cause, fish and that's about all I got.

Unless you hunt, then deer and other pokes of the like but people won't eat Pokemon like Machamp. Every Pokemon would have a purpose.

Machamp would be used for building and things of the sort. He would be a work Pokemon. Its the same reason we don't eat monkies. There would be no real reason to eat human shape Pokemon.

Okay, sure, Americans may not eat Monkeys, but I know theres plenty Africans who do, and not just Africa.
Wouldn't the same extend to the Pokeworld? Maybe in Kanto they won't eat Machamp, but who's to say Machamp Ribs aren't a delicacy in Hoenn? Where they might dislike the idea of a Stoutland on their plate, which in Sinnoh might be commonplace?

TLDR: Different regions, different tastes.
