Just making sure again:
"Choose 2 of your Benched Pokémon. For each of those Pokémon, search your deck for a Fairy Energy card and attach it to that Pokémon. Shuffle your deck afterward."

If I had just one benched Pokémon, I could use it and just "do as much as you can", right?
Choosing the 1 Pokémon and attaching 1 Fairy Energy card to it?

Right, you would attach one energy to the one.
Even if you had two, you could choose to "fail" on one of them if you wanted, since it is a search of a private area for a specific type of card.
