Testing against popular or strong decks in the current metagame is never a bad choice. You learn how other decks are played (if you were to ever encounter one in a tournament) and you also have a general strategy for your deck. Dont always playtest agaisnt one deck, there are so many out there with interesting strategies and playtesting should have the goal of understanding matchups and the proper strategies to beat the opponent. With that said, some of the current decks I suggest you practice against would be:

Darkrai / Tornadus
Zekeels
Terrakion rush / Terrakion variants

Currently, I've seen a lot of ZPS, LostGar, Donchamp, Reshiboar, Darkrai EX, and Ross Cawthon's "Truth" Deck. you can try getting World Championships Decks or make proxies to practice with.
