Thought of one more:
Demo Game Pack- Released to some retailers as a demonstration to promote Pokemon just before Base Set was released (if I remember correctly; please correct me if I'm wrong though) and is quite rare. It's unknown to me how many of these still exist, but I know you hardly ever get the chance to pick one up. Value $150ish (but you could reasonably expect to pay more given how scarce it is)
I'm keeping my fingers crossed that's the route they are traveling starting with the revamp to the Victory Medals. Maybe we will see the designs being unique every BR. Then you'll see more and more collectors being drawn into the game itself for these tournaments at least
I think the holy grail is the fabled non winner Best Promos Rocket's Mewtwo and Rocket's Hitmonchan. After all, holy grail by definition IS that which is completely unobtainable... I do concede that if these ever turn up, the Illustrator would top that list in unobtainability and rarity.

I wish we had valuable cool promos for winning events like they do in Japan.

I still say the Pikachu Illustrator is the "Holy Grail" of Pokemon cards, but I own a mint 1 so maybe I'm a little biased
