That first delfino square one is real hard for me, I keep falling in the water.

Sky Garden: If you don't have a mushroom, then mini-turbo and R jump from the ramp on the right over to the track. (This is the ramp to the right of the speed boost with an item box floating in the air)

If you have a mushroom, go to the LEFT of the speed boost with an item box floating in the air. Instead of turning the corner, go straight and mushroom and R jump over the track.

Do cloud hopping near the end of the lap.
 
Bowser Castle: When your at the point where your in that spinning wheel with the flames (not the one where you fall off) but theres like a litte hole you can go through.
 
Venusaur: I'm using Luigi in the Egg 1 now. I'm pretty sure it's impossible to do the first shortcut (the big one) on Sky Garden with that. I've only done it with the Cucumber.
 
In Lugi's mansion, while not actually being a short cut, using a light kart/character will allow you to run through mud(?) easily and faster than the larger karts/characters. Theres also the one after you leave the manion where you can star/mushroom straight through.

Mushrum/star is big help in desert level, behind pyramid & trhough the sand in those wicked "S" turns
 
you really have to over-stress your snaking in desert hills. do time trials to see what i mean, it's not that easy at first.
 
None of these are really hidden, but they save time if you can pull them off.

Cheep Cheep Beach: If you have a mushroom/star, you can cut a huge corner by going through water. Instead of the sharp left/right turns with the item boxes after you go off the one turbo ramp, you can cut through the water on the right.

Luigi's Mansion: With a mushroom/star, you can cut out a lot of turns by speeding through the grass (and avoiding the gravestones).

Shroom Ridge: The usual mushroom/star cutting off a turn by going through the grass on the uphill climb.

DK Pass: Cutting through the snow on the uphill S turns with a mushroom/star.

Mario Circuit 1: You can cut off the large right turn by a considerable amount with a mushroom/star.

They sure like to reward those who have good items...

That was MK64, and I still think that was the best Rainbow Road out of all the games. This new one is simply too darn complex...
